Papaya Soup

 

Fresh Fish With GREEN PAPAYA SOUP (2 servings)
Ingredients:
  • 7 oz of fish of your choice – Cod, Halibut, White Tuna, Flounder (make it vegan with chickpea and seaweed)
  • 4-5 slice of fresh ginger
  • 3 slices Astragalus root
  • 3-4 Black Dates or any dates you can find
  • ¼ of green papaya (peeled and seeded), or at least the least ripest you can find
  • 4 Cups of water or vegetable broth
Instructions:
  1. Prepare the double boiler. Bring the water to boil. Add in all ingredients into the inset of the double boiler and cook on low heat for 1½ – 2 hours. Low heat allows all the nutrients to stay in tact.

Thai Green Papaya Salad aka "Som Tam"

 

Depending on what part of Thailand you are at you'll find a different recipe for Som Tam. Some recipes call for seafood or fish and some have more spice than others. This is our take at Herbal Papaya. This green papaya salad, also known as "som tam", is popular the world over, and when you taste the flavors it you'll know why. The slightly tart flavor of the green papaya combines wonderfully with the spice of red chili and the saltiness of fish sauce and the sweetness of honey (note that it can also be made vegetarian/vegan - see recipe). Green papaya salad is a wonderfully unique and flavor-filled dish that will make a great entrance to any meal or as a meal in itself. It's also easy to make, low-calorie, and very nutritious. So try this Som tam recipe for today.

Her Recipe:
Eye Pleasing, Great tasting Tropical Fruit Salad

1/2 cup ripe fresh papaya chunks
1 ripe mango
1 ripe banana
1 Strawberry Pear [also know in the Asian stores as Dragon Head Fruit] chunks
2 ripe peaches chunked [peelings on]


All chunks about 3/4-1 inch square or so. The colors are all so vivid together. Your guests will not want to resist. When you peel off the brilliant red skin off the Strawberry Pear, the surprising white flesh with tiny black seeds [similar looking to a kiwi inside] are a real surprise and brightens up the whole dish. If you cannot find a Strawberry Pear, substitute 2 peeled kiwis chunked.

Serve chilled.

Best made in season so all the fruits are ripe and sweet. No need for sweetener!
Otherwise, you might add a bit of raw blue agave.

1-2 medium Papayas, peeled, seeded and diced small
2 tablespoons fresh lemon juice (try limes also)
2 tablespoons extra virgin olive oil
2 teaspoons cayenne pepper (or to taste)
2 tablespoons chopped fresh cilantro
2 tablespoons shallots (try also scallions or red onion), chopped
Celtic or Himilayan salt and freshly ground black pepper to taste
          
Preparation method: Place papaya cubes in a bowl. In another bowl mix lemon juice with olive oil. Season with cayenne pepper, cilantro, chives, salt and black pepper. Stir well, pour on the handle, cover & refrigerate for about 30 minutes to incorporate flavors before serving. Serve with chips, sliced avocado or on top of rice.

Roasted Papaya and Parsnips

Roasted Papaya and Parsnips


2 lbs parsnips, peeled and cut lengthwise
2 lbs papaya, peeled and cut into quarters
Optional: add carrots or other root vegetable on hand
1 ½ to 2 Tbsp. coarsely chopped fresh sage
3 Tbsp. Olive Oil
1 Tsp. Celtic Salt
½ Tsp. pepper
Pinch nutmeg
Pinch allspice
Garnish: Fresh Sage Leaves

Preheat oven to 475. Toss together ingredients. Arrange in single layer in a lightly greased 17 x 12 inch jelly roll pan.
Bake on 475 on an oven rack 1/3 down from top. Stir occasionally, 30 minutes until tender or browned. Garnish if desired.

¼ oz citrus tequila
Fresh Papaya Juice
Lime or orange squeeze

Pour tequilas over ice. Add fresh Papaya Juice. Finish with a squeeze of lime. Garnish with lime or orange slice or chunks of papaya in the glass.

Lighten up with a nutrient packed fresh snack or side dish of Quinoa with Papaya. Papaya is naturally low in sugar and using honey or agave is also low glycemic, so this recipes is diabetic friendly.

Quinoa is fully of nutrition and has been used for thousands of years, its a grain that has protein in it, yes PROTEIN!

This recipe is gluten free friendly too with those with gluten intolerance and celiac's disease.

 

QUINOA AND PAPAYA WITH MINT ON TOP

Here are the ingredients: 

 



1 cup Quinoa
1 ½ Cup Water
Organic Papaya Cubed
A Handful of Pecans or Walnuts Chopped
Handful Fresh Chopped Mint (optional) 
Dash Himilayan or Celtic Salt
1/4 cup extra virgin olive oil
1/4 cup lemon juice
1 tbsp. raw unpasteurized honey or agave nectar (vegan option) 

Soak the quinoa for five minutes. Then cook the quinoa with a cup and a half of water with a dash of salt for 15 minutes.
Set aside and let cool. Chop papaya, nuts and mint and mix in cooled quinoa. Add olive oil, lemon juice and honey to sweeten the mixture.

Cool and enjoy.
